SUPERBOWL SUNDAY SNACKS:
HOT ARTICHOKE DIP:
1 – 13 ounce can of artichoke hearts packed in water (not marinaded in oil or vinegar)
1 C. Parmesan cheese (not fresh – use dry powder kind in green can)
1 C. Mayo (use low-fat mayo only. Regular mayo is too fatty)
2 small cans green chiles (7 ounces total)
Drain and chop artichokes. Add remaining ingredients. Mix well. Bake at 350 degrees for 30 minutes til hot and bubbly.
Serve with crackers or bread of choice. We like wheat thins .
GAME DAY QUESO:
1 – 32OZ BLOCK OF VELVEETA CHEESE
2 – JARS OF TOSTITOS CHEESE (1 WHITE CHEESE & 1 REGULAR QUESO)
1 – CAN OF ROTEL W/ GREEN CHILIS
1 - CAN OF CHILI
1 LB - GROUND BEEF
1 LB - PORK SAUSAGE
2 – PACKETS OF TACO SEASONING
1/3 C. - WATER
BROWN GROUND BEEF AND SAUSAGE TOGETHER IN A SKILLET. ONCE BROWN ADD TACO SEASONING AND WATER, STIR UNTIL INCORPORATED, THEN SET ASIDE. CUBE UP VELVEETA INTO 1” CHUNKS.
IN A LARGE CROCKPOT ADD ALL OTHER INGREDIENTS INCLUDING THE VELVEETA AND THE BEEF/SAUSAGE MIXTURE.
COOK ON HIGH FOR 2 HOURS, STIRING PERIODICALLY (ABOUT EVERY 20-30 MINS.)
GARLIC PARMEASAN AIR FRYER CHICKEN WINGS:
2-3 LBS - CHICKEN WINGS
2 TBS - OLIVE OIL
1 - LEMON
2 TBS - CORNSTARCH
1 TSP- SALT
1 TSP - BLACK PEPPER
1 - STICK OF BUTTER (MELTED)
1/3 C. – POWDER PARMESAN
4 – SMALL/MEDIUM CLOVES OF FRESH GARLIC
1 TBS – CHOPPED PARSLEY
1/8 TSP – GARLIC SALT
¼ C. – GRADED FRESH PARMESAN
PLACE THE THAWED CHICKEN WINGS IN A BOWL AND TOSS WITH THE OLIVE OIL AND ½ OF THE LEMON JUICED. THEN ADD IN THE SALT, PEPPER, CORNSTARCH AND TOSS UNTIL COATED. PLACE IN THE AIR FRYER ON 400 DEGREES FOR 15 MINUTES THEN FLIP/ROTATE WINGS AND AIR FRY FOR ANOTHER 15 MINUTES UNTIL CRISPY.
WHILE THE WINGS COOK MAKE THE GARLIC PARMESAN SAUCE TO TOSS THEM IN. IN A BOWL, MELT THE BUTTER, ADD IN THE GARLIC, GARLIC SALT, PARSLEY AND BOTH PARMESAN CHEESES AND MIX UNTIL COMBINE.
ONCE THE CHICKEN IS DONE TOSS THEM IN THE GARLIC SAUCE AND ENJOY!
THE SAUCE WE USED FOR THE OTHER WINGS WAS FROM BUFFALO WILD WINGS AND IS THE ASIAN ZING FLAVOR.
MEATBALL SLIDERS:
MEATBALLS:
2 LBS – GROUND BEEF (I USE THE 80/20)
2 C. – PANKO BREADCRUMBS
6 – WEDGES OF LAUGHING COW GARLIC & HERB CHEESE
2 – EGGS
3 TBS – SOUR CREAM
½ - ONION (FINLEY DICED)
¾ C. – GRATED PARMESAN CHESSED
1 TBS – DRIED PARSLEY
1 TSP – SALT
1TSP – BLACK PEPPER
1 TSP – RED PEPPER FLAKE
2 TSP – GARLIC PASTE
1 TSP – ONION POWDER
MIX ALL INGREDIENTS IN A LARGE BOWL AND MIX UNTIL EVERYTHING IS COMBINE. THE ROLL IN TO DESIRED SIZE. IN A SKILLET, ADD OLIVE OIL TO COOK MEATBALLS UNTIL DONE. ENSURE TO ROTATE SO ALL SIDES GET A NICE CRUST.
SAUCE:
½ ONION FINLEY (DICED)
4 – CLOVES OF GARLIC (MINCED)
1 TBS – DRIED OR FRESH BASIL
28 OZ CAN OF CRUSHED TOMATOES IN PUREE
2 TBS – TOMATO PASTE
1 TSP – RED PEPPER FLAKES
1 TSP – SALT
1 TSP – BLACK PEPPER
SAUTE ONIONS IN 2 TBS OF OLIVE OIL UNTIL TRANSLUCENT, THEN ADD IN GARLIC AND COOK UNTIL FRAGRANT. MIX IN THE TOMATO PASTE AND COOK FOR A MINUTE OR SO, THEN ADD IN THE CRUSHED TOMATOS AND ALL OTHER INGREDIENTS. LET COOK UNITL WARM THEN ADD THE MEATBALLS.
BAGUETTE:
2 – FRENCH BAGUETTES
1 - STICK OF MELTED BUTTER
½ TSP - GARLIC SALT
1 TSP – MINCED GARLIC
1 TSP – FRESH PARSLEY (CHOPPED)
HAVARTI CHEESE
POWDER PARMESAN
GRATED PARMESAN CHEESE
SLICE THE BAGUETTES IN HALF AND PLACE ON A COOKIE SHEET. MIX TOGETHER THE BUTTER, GARLIC, GARLIC SALT, PARSLEY THEN SPREAD ON THE BAGUETTES. BROIL THE BAGUETTES UNTIL IT GETS CRISPY. REMOVE FROM OVEN THE CUT INTO SLIDER SIZE.
PLACE TOMATO SAUCE ON BOTH SIDES OF THE SLIDER AND A SLICE OF HAVARTI ON ONE SIDE AND A MEATBALL ON THE OTHER. TOP WITH THE PARMESEAN AND PLACE BACK IN THE OVEN TO BROIL. ONCE CHEESE GETS MELTED, REMOVE FROM OVEN AND ASSEMBLE THE SLIDERS, SECURE WITH A TOOTHPICK. ENJOY!
